I found this online:

"An except on how Agave is processed

...Agave plants are crushed, and the sap collected into tanks. The sap is then heated to about 140°F for about 36 hours not only to concentrate the liquid into a syrup, but to develop the sweetness. The main carbohydrates in the agave sap are complex forms of fructose called fructosans, one of which is inulin, a straight-chain fructose polymer about ten eight to 10 fructose sugar units long. In this state, the sap is not very sweet.

When the agave sap is heated, the complex fructosans are hydrolyzed, or broken into their constituent fructose units. The fructose-rich solution is then filtered to obtain the desired products that range from dark syrup with a characteristic vanilla aroma, to a light amber liquid with more neutral characteristics."

I'm guessing that if you go by the dogma of paleo, and not eating anything "processed", then this would considered non-paleo. However, I would think that raw honey would definitely have been eaten by paleo man. (provided they didn't die of bee stings!)

Is It Paleo? Empty Agave

Post  Coach Wes Tue Jan 15, 2013 10:45 pm

There always seems to be a debate about agave and honey. Both are almost 100% fructose. This means that they have to be processed by the liver. That is a whole other topic, but neither are good for you in large amounts. Local honey would be a better choice, as it is not processed and may provide some benefit other than just sweetness. Used in small amounts, I won't ding you for either, but keep them to a minimum.

The honey I have is local and i don't use a lot when i use it (max 2tbsp, like for a whole batch of roasted nuts).

I'm not a big fan of agave, i was just wondering. Thanks!

Is It Paleo? Empty Agave

Post  ajweaver Wed Jan 16, 2013 3:55 pm

I liked agave nectar over honey for it's inherent ability to dissolve into other liquids - room temperature and even colder ones. This worked great in the "Wes's recovery shake". Honey on the other hand sits at the bottom of the recovery shake and/or just clings to the whisk = no good.

Nevertheless, I am attempting to remove all sweeteners from my diet at this point. Adding a healthy amount of ginger, nutmeg, cinnamon and a little cayenne for kick is good enough to the recovery shake and black coffee works. If too bitter I can add a little heavy cream.

Is It Paleo? Empty Article on agave + stevia

Post  ajweaver Wed Jan 16, 2013 4:00 pm

If you are interested do a search on (with quotes):
"Debunking The Blue Agave Myth"

Also, my wife has a stevia plant out back which she uses the leaves to sweeten her tea. Smile

Agave also mixes well in Margaritas. Honey, not so much Sad

Is It Paleo? Empty Organic Chef Irish Sausage (bread crumbs) and VF Pork?

Post  ajweaver Sat Jan 26, 2013 9:09 pm

Ok, Organic Chef states his Irish Sausage is made with breadcrumbs. Does this eliminate it from being a (+1)? Also, pigs aren't grass fed but are vegetable fed - all of Whole Foods pork at the butcher are free range and are vegetable fed. Is this equivalent to grass fed beef (+1)?
