Easy breakfast bake

I think breakfast is hard for a lot of people who either aren't hungry in the morning, or have no time to make anything. A lot of times we will make a sort of scrambled egg muffin in advance, and take two or three with us.

I don't have a recipe per se, but you can easily wing it.

Brown some ground meat or sausage. Cut up vegetable like onion and mushrooms. Basically anything you would put into an omelet. (could probably do raw meat if it's pastured)

Crack some eggs. For 8 "muffins" it usually takes about 6 eggs.

In a muffin tin, add meat and veg equally to each well, then fill in with egg. Bake at 400° for about 15-20 minutes or until the eggs have risen and are a bit firm.

Then just pop them out and let them cool.
