Brooke's Awesome Chipotle Sweet Potatoes

4 large sweet potatoes
2 garlic cloves
1/2 stick butter
can chipotle peppers in adobo sauce
about 1/3 cup heavy cream
optional- about 5 slices of thick cut bacon, diced and cooked crispy

Directions:
Peel 4 large sweet potatoes and cut up into cubes. Boil potatoes and garlic in salted water until tender. Strain. In same pan, add butter and cream. Pour strained potatoes and garlic back in( you can turn burner off at this point). In food processor(preferably a mini one) process 4 chipotles. I usually either freeze the rest of the peppers for a future recipe or make Wes some chipotle mayo or ranch dressing or sour cream sauce. Add puree to sweet potatoes and mix altogether with a hand mixer until smooth and creamy. I usually add some fresh cracked pepper at this point and taste it to see if it needs salt(usually if you salt the water enough it doesn't need it). If you like you can now add the crispy bacon to the top and enjoy!
